巧克力葡萄干曲奇

材料 A
牛油 250g
幼糖 200g
云尼拉 1/2小匙
鸡蛋 1 1/2 粒
咖啡精 1/2 小匙

材料 B (一起晒过)
面粉 400g
可可粉 4大匙
发粉 2小匙

材料 C
葡萄干 100g

做法:
1. 先将A料的牛油和糖打发至白,之后加入香精和鸡蛋打均匀,
2. 筛入B料以低速搅拌均匀,最后加入C料拌匀。
3. 把面糊装进挤花袋挤出喜欢的图状,或是用汤匙把面糊均匀逐粒放在烤盘上。
4. 用 180'C 上下火烘约15-20分钟。

PS//不喜欢葡萄干的朋友可以把葡萄干换成巧克力粒,花生,腰豆,杏仁粒等。

我没有放咖啡进去,要加入咖啡粉的朋友可以在打奶油后加入,可以事先用少量(不要太多,不然咖啡味道会被盖过)的水来调稀咖啡粉,这样效果更滑。

做这款饼干的时候我就想起了我学院的朋友,也曾经是我室友的 June, 她很讨厌葡萄干 ^^"然后我每次都会用葡萄干来弄她~哈哈 >.<

Chocolate Raisins Cookies

Ingredient A:
Butter 250g
Castor sugar 200g
Vanilla 1/2 tsp
Eggs 1 1/2 nos.
Instant coffee 1/2 tsp

Ingredient B(Sieved)
Plain flour/ All purpose flour 400g
Cocoa powder 4tbsp
Baking powder 2tsp

Ingredient C
Raisins 100g

Method:
1. Cream butter and sugar till fluffy, add in egg and vanilla slowly to prevent curdle.
2. Add B and mix with medium speed until combine, lastly fold in raisins til combine.
3. Bake with 180'C for 15-20mins.

PS: You can substitute raisins with walnuts, peanuts, almond, cashewnut or chocolate chips as desired.

I have also omitted the instant coffee, if you want to add in add at step 1 after beating butter. For smoother result you may add a little water to dissolve it.

When make this cookies I will think of my classmate aka roommate, June. She don't like raisins but I love to make fun of her using raisins ^^" When you have a friend like June, you can change the raisins to others too.
