1. Chocolate couverture:
由cocoa mass和cocoa butter形成的纯巧克力。
通常是甜点师/有经验者用的巧克力,需要调温,高品质的couverture巧克力味道很好。价钱很贵。在Kepong的 Pastry Pro有卖。
Content cocoa mass and cocoa butter. Usually used by pastry chefs / experienced bakers, high quality couverture chocolate has rich taste. Price is expensive, can purchase in Kepong, Pastry Pro.
2. Chocolate compound:
市面上大部分所出售的巧克力类型,不需要调温,味道不比couverture好,但比couverture来得容易处理,建议新手使用。
Sold in baking shops/supermarket, not require tempering, lack of rich chocolate taste. Easier to handle than chocolate couverture. Recommended to beginners.
